Caramel Velours

A crisp sweet pastry is topped with a rich dark chocolate pecan brownie and layered with silky salted caramel crémeux, before being enveloped in a smooth dark chocolate mousse.

Finished with an ultra-vanilla Chantilly, creamy pecan praline, caramelized toasted pecans, and delicately adorned with 23 karat edible gold leaves. 

This elegant entremet brings together the richness of caramel, the deep notes of dark chocolate, and the nutty flavours of roasted pecans.
